An Almost Allergy Free Summer Feast

(If you have nut allergies, you will need to use a different flour! Coconut or potato work well.)

Main course:

Apple Baked Breaded Chicken

You will need:

Chicken breasts

Organic Apple Juice (No Sugar Added)

Almond Flour

2 eggs

Salt (optional)

Coconut oil

Baking pan

Large Ziplock bag

  • Marinate the chicken in the apple juice overnight.
  • Mix the eggs and almond flour in a zip lock bag. Add salt (optional)
  • Drop the moist thawed chicken breast in the bag and shake thoroughly.
  • Oil the baking sheet and place breaded breasts on the sheet.

(Is this a foodie fantasy or a sex fantasy – hmmmm…)

  • Place chicken in oven at 350 degrees.
  • Bake until brown.

Side dishes:

French Fry Wedges

You will need:

Potatoes

Salt

Coconut oil

Microwave – optional.

Skillet

Sharp knife

Spatula

For crisper fries – bake the potatoes in the microwave until soft. This makes the starch in th potatoes cook faster and to a crisper consistency.

For limper, more moist fries use the raw potato.

  • Cut the potato in half with a sharp knife.
  • Cut each half into strips.
  • Heat the oil in a skillet until hot.
  • Add potato slices to hot oil.
  • Sprinkle slices with salt.
  • Flip.
  • Sprinkle again with salt.
  • Flip.
  • Continue to flip until browned.
  • Place on paper plate or glass plate with paper towel covering to drain excess oil.

Almond Coconut “Bread”

You will need:

4 eggs

8 oz coconut milk or coconut water – for richer texture use “milk”

2 cups almond flour

1 cup coconut flour

2 tbsp coconut oil

Large glass bowl

Baking pan

Blender

  • Place eggs and all liquid ingredients in blender and blend well.
  • Place flours in glass bowl.
  • Add liquids to glass bowl.
  • Add coconuts shreds to bowl.
  • Mix throughly until you have a nice dough.
  • Oil baking pan not forgetting sides.
  • Pour dough into baking pan.
  • Cook at 350 F until golden brown.

Fun stuff to add –

Almond butter – buy it or make your own.

Apple sauce – buy it or make your own.

AND add a salad of your choosing for those needed vegetables!
