Dairy-free Ice Cream Recipe – EASY

It’s summer and you are seriously hot. You need a cool treat to beat the heat but you don’t want to break training or spend a lot of dough.

Well, here is another cheap and easy ice cream recipe – this one absolutely dairy free.

This one is so easy even I can do it. I actually made some today.

Banana Nut Ice “Cream”

2 frozen bananas

Coconut shreds

What I do is freeze my browning bananas – and yes, no matter what my intentions some always do have time to brown. You peel the bananas, cut them into slices and put them in a ziplock and then freeze them overnight.

Then when you are ready for ice cream, just put them in a blender. I add shredded coconut for a more robust texture and tropical flavor and then add a handful of sliced almonds to mine so that goes in the blender as well.

If you prefer peanuts or walnuts or cashews that will work as well.

Then just blend all of your ingredients together until you get a “soft serve” consistency.

Once you have it well blended, place in bowls and serve.

Easy as that.

I hope you enjoy this as much as I did.
