“Thai” Coconut shrimp noodles – everything free

Peanut Coconut Shrimp Noodles

Thai Rice

WARNING: CONTAINS PEANUTS. IF YOU ARE ALLERGIC TO NUTS SKIP THIS ONE.

Note: This is an EASY recipe, so you don’t have to be a chef or a cook for this one but this one does requires preparation but trust me it is absolutely worth it. I usually do all my prep cooking in advance and refrigerate my ingredients but if you do this from scratch put in about thirty minutes for prep. Practicing “Mise En Place” helps!

You Will Need:

Blender

Microwave

Skillet

Sauce Pan (optional)

Large pot with lid

Spoon

Glass bowl

Microwave or small sauce pan

Measuring cup

Coconut cream

Peanut Butter

Peanuts (shelled,unsalted)

Shrimp

Rice noodles

Stage 1: Shrimp

Step 1: Put some coconut oil or peanut oil in a large skillet.

Step 2: Prepare your shrimp. I use precooked, de-veined but if you prefer the taste of raw be sure to peel, de-vein, and detail your shrimp.

Step 3: Stirfry your shrimp until they curl up and their noses touch their tails.

Step 4: Allow to cool.

Stage 2: Coconut Creme and Peanut Butter

MICROWAVE VERSION:

Step 1: Mix coconut cream with hot water in glass bowl to reduce thickness and make stir-able.

Step 2: Take your peanut butter (I make my own in a blender. Mine is sugar and salt free.) and add it to the coconut cream in the bowl. Heat the mixture at low heat in thirty second intrevals until peanut butter melts into mixture. Stir throughly.

SAUCEPAN VERSION:

Step 1: Rub inside of sauce pan with coconut oil.

Step 2: Add coconut cream and water and heat until stir-able.

Step 3: Add peanut butter and continue to heat slowly until peanut butter can be stirred into mixture.

Stage 3: Rice noodles

Step 1: Pour oil from shrimp skillet into rice pot.

Step 2: Add 2 cups of water to pot

Step 3: Bring pot to boil

Step 4: Remove pot from heat (turn off burner)

Step 5: Add 1 cup rice noodles to boiling water.

Step 6: Allow noodles to soak for 10 minutes or until soft.

Step 7: Drain noodles and set aside.

Have faith, we are almost done.

Stage 4: Fun with the Blender

Step 1: Put the shrimp in the blender and hit the puree or blend button.

Step 2: Grin like an idiot as the blender turns the shrimp into a fine confetti like substance.

Step 3: Add the coconut, peanut mixture and blend until well mixed.

Stage 5: Serve and EAT

Step 1: Put your noodles on the plate

Step 2: Pour your shrimp sauce on the noodles

Step 3: Sprinkle lightly with unsalted peanuts

Step 4: Eat your incredibly delicious meal.
