To celebrate the newest food on my menu, here is a RICE dish.
Shrimp Fried Rice
You will need:
Skillet with a lid
Pot with lid
Coconut cream (optional)
Note – since I am inherently lazy, I use pre-chopped carrot chips and frozen peas for this recipe. Feel free to modify to taste.
Step one: Stirfry your shrimp and carrots in the coconut oil on medium heat. Once cooked, drain the oil into your rice pot. You will be using it instead of butter or other oils and it is pre-flavored by the shrimp.
Step two: Once shrimp are cool, remove the tails.
Step three: Put the tailless shrimp, carrots, and peas in your rice pot.
Step four: Add two cups of uncooked rice to pot.
Step five: Add water to pot according to instructions on rice bag
Step six (OPTIONAL): Add two teaspoons of coconut cream.
Step seven: Seal tightly with lid and boil over medium heat, stirring frequently until rice is soft.
Step eight: When rice is done, regrease skillet (if needed) and poor rice into skillet.
Step nine: Heat skillet over medium heat stirring and turning rice until “fried” to taste.
Serve and enjoy!
