Another recipe – Peanut butter “cookies” -UPDATED

I am posting the original recipe below but in my version I omitted the sugar and used a tbsp of coconut cream. Below that you’ll find my recipe.

MAGIC PEANUT BUTTER COOKIES

Easy and delicious, this is everyone’s favorite no-flour cookie. Kids with IBS sometimes do better if we play down the wheat in their diets.

Ingredients
1 large egg
1 cup natural peanut butter
3/4 cup granulated sugar

Directions
Preheat the oven to 350° F.
Combine all ingredients in a mixing bowl. Form into 1 inch balls or drop by rounded teaspoons onto an ungreased cookie sheet.
Dip the tines of a fork into the dough, then into some loose sugar in a small bowl. Press the back of the sugared fork into the dough to make a crisscross design on top of each cookie, flattening each one to approximately 1/4 inch thick. Dip the back of the fork into the loose sugar in between pressing on each cookie.
Bake approximately 12 minutes, until the cookies look dry on top. Let the cookies cool on the cookie sheet before removing and storing in an airtight container. Makes 28 small cookies.

 

PEANUT BUTTER COOKIES

What You’ll Need..

Baking sheet or pizza pan

Blender


1 large egg
1 cup natural peanut butter

Step one. Preheat the oven to 350° F.

Step two. Place your peanuts in the blender and bend as fine as possible. If you don’t have my allergies to sugar and are using a commercial grade peanut butter load it into the blender anyway.

Step three. Add one whole egg to the blender. I use brown organic eggs.

Step four. Blend until well mixed. Remove blender from base.

Step five. Form into 1 inch balls with your clean hands (you did wash them right?) or drop by rounded teaspoons onto an ungreased cookie sheet.

Step six. Bake for approximately 12 minutes, until the cookies look dry on top.

Step seven. Let the cookies cool on the cookie sheet before removing and storing in an airtight container. Makes 28 small cookies.
