Turkey/Chicken with Baked Apples

This recipe is gluten, soy, corn, dairy, grain, and nut free. It also tastes fantastic. If you are especially sensitive to sugars you might want to give it a miss due to the sweet potato, or just leave the tuber out altogether.

What You’ll Need:

Baking Pan

Sharp knife

1 Turkey Thigh or 2 Chicken Quarters

8 ozs of sugar free organic apple juice

1 large sweet potato

 

Put the meat in a pan. Pour in the eight ounces of apple juice. Place in fridge.

Bake the Sweet potato until it is wholly softened. You can do this in the oven naturally or you can microwave the potato. It’s about 8 minutes for a 1000 Watt microwave.

When the potato is done, slice it with a sharp knife into circular “chips”.

Remove the meat from the fridge.

Arrange the chips around the meat inside the pan.

Turn oven to 250 degrees F.

Place pan uncovered in oven.

Allow to cook for three hours.

When done, the meat becomes very tender and redolent of apples, and the potatoes soften and mix with the juice and meat juices to create a sweet “gravy”. An excellent savory.

I served mine up with peas, baked organic apple slices, and raw baby carrots.
